Gluten Free White Bread

This flavorful recipe will not make you forget standard homemade bread, but it is a flavorful substitute that will soon become one of your favorites.

4 cups gluten-free flour
2 large eggs
3 tsps xanthan gum
1 tsps salt
2 tsps egg substitute
4 tablespoons sugar
4 tsps yeast
6 tablespoons butter, softened
2 tspns vinegar
2 cup warm water

Combine the dry ingredients in large mixing bowl and stir with a fork to ensure they are totally mixed. Meanwhile preheat the oven to 400° F. Grease two bread pans and flour with rice flour.

In a separate bowl or using a heavy duty mixer, combine vinegar eggs and vinegar, then add butter along with about 1 1/2 cups of the warm water. Slowly add the dry ingredients stiring or mixing the ingregients on a low setting. The batter should come to have the consistency of cake batter. This mixture will likely be on the dry side but if it need more moisture, add in some of the reserved warm water. Continue to mix for about 300 beats or about 3 more minutes from the mixer on a high setting.

Pour dough into the pans. Set pans aside in warm place and allow to rise for 30 to 40 minutes. The dough should roughly double in size. Bake for 50 minutes to one hour. Check for doneness by tapping top of crust. Remove from oven and allow to set for 20 minutes.
