Bread Machine Reviews
Gluten-free features can be a big concern. We got the following question via email:

I appreciate the bread machine reviews however I find it hard to compare them. One review on the Pro 875 is not favorable for gluten free and there is a zojirushi model that is gluten free but no review. If the Z model that is reviewed is gluten free nothing is said. Need more gluten free models reviewed please.

Our answer:

Truthfully, none of the machines is going to make a gluten free loaf that is as good as a standard wheat based loaf. (However, our tests got a tolerably good loaf from the Zojirushi BBCCX20). The reason is, without gluten the dough tends not to form the typical dough-ball, and is much more likely to stick to the sides. Whatever model you get, you are probably going to need to assist with a plastic spatula during the kneading cycle, scraping dough off the side of the machine.

I think as far as breadmachines go, the Z is the best all around machine. The problem with the Breadman was not that it couldn't handle gluten-free. It was more the consistency of manufacture.
